Garden Herb & Goat Cheese Omelet
Ingredients
3 eggs
1 tbsp butter
1–2 tbsp goat cheese, crumbled
1 small handful fresh spinach
1 tbsp chopped chives
1 tbsp chopped parsley
Salt & freshly ground black pepper
Optional: sautéed mushrooms or cherry tomatoes
Method
Whisk the eggs gently with a pinch of salt and pepper.
Melt butter in a nonstick skillet over medium-low heat.
Add the eggs and let them begin to set.
Gently push the cooked egg toward the center, allowing the uncooked egg to flow underneath.
When the top is still slightly moist, add spinach, herbs and goat cheese.
Fold the omelet in half and slide it onto a plate.
Finish with fresh herbs and black pepper.
The key: Don't let the omelet become brown or dry. A beautiful French omelet should be soft, tender and just barely set inside.
My favorite combination: eggs + goat cheese + chives + spinach + a few sautéed mushrooms. Pair it with a simple tomato salad and crusty sourdough.
That would probably be my #1 choice if the goal is to really taste the quality of those pasture-fed eggs.
